Tom Daley’s Subwich with Falafel, Slaw and Tahini Dressing

Champion diver Tom Daley likes a healthy diet, so he’s created this falafel lunch recipe with Deli Kitchen!

How to make Falafel Lunch Recipe:

  1. Warm falafel according to pack instructions.
  2. In a medium bowl, mix carrot, cabbage and oil with 1tsp lemon juice, a pinch of salt and pepper and set aside.
  3. In a small bowl, combine lemon zest and juice with tahini and pepper or chilli flakes (if using). Whisk in 1-2tsp cold water, stirring until it thickens. Season and stir in the chopped mint.
  4. Mix grapes into slaw and spoon into toasted sub rolls. Add falafel and a few extra mint leaves. Drizzle with the lemon tahini dressing, close the sub lid and serve.
