Mexican-style Crustless Quiche

With flavours of creamy cheese, chorizo, chipotle and lime, as well as juicy red pepper and tomato, you’d never guess this crustless quiche is a Weight Watchers recipe – but it will only set you back 2 SmartPoints per serving.
Serve with a side salad of mixed leaves, sliced tomato and cucumber for no extra SmartPoints!

Cooking Time: 30min

Serves 4

  1. Preheat the oven to 200C, 180C Fan, Gas 6. Lightly whisk the eggs in a large bowl. Beat in the quark until the mixture is smooth.
  2. Add all the other ingredients except the spinach and cooking spray (reserving some of the feta). Season to taste, stir to combine, then fold in the spinach.
  3. Mist a 22cm tart tin with cooking spray and pour in the quiche mixture. Top with the reserved feta and bake for 25-30min until golden.
  4. Let cool in the tin, then cut the crustless quiche into wedges and serve.
