Spicy Chicken Satay

For a lunch with bite, whip up this delicious marinade, leave for 2 hours for the flavours to infuse, and then grill – simple!

Serves: 4
Prep Time: 15min + 2hrs marinating
Cooking Time: 15min

  1. Mix together the Horlicks Original, coconut milk, lime juice and zest, garlic, peanut butter, soy sauce, honey and Madras powder until smooth. Set aside a small dish to use as a dipping sauce.
  2. Dice the chicken thighs into large chunks and cover with the remaining satay sauce. Leave to marinate for 2hrs.
  3. Thread the chicken onto 2 kebab skewers, brush with a little oil. Chargrill on a barbecue or cook under the grill until cooked through (approx 6min on each side).
  4. Serve with the dipping sauce, lime wedges and a fresh Asian salad or rice.
