Mouthwatering Chorizo & Bean Melt

It’s time to think outside the box – or can! Baked beans are nutritious, good value, and make a great ingredient in some tasty dishes. Enjoy this treat with a Spanish flavour from Branston Beans.

Preparation Time: 15min
Cooking Time: 30min
Serves: 1

  1. Pre-heat your oven to 200ºC (fan).
  2. Lightly fry the chorizo, onion and black pepper in a frying pan until the onion is soft and the chorizo has started to brown. Leave to cool.
  3. Cut the ready-rolled puff pastry into two 11 x 12cm pieces – one top piece and one bottom.
  4. Brush beaten egg onto the bottom piece of puff pastry, making sure you go right to the edge.
  5. In a bowl, mix the beans with the cooled chorizo and onions. Spoon the mix onto the bottom piece of pastry, leaving a clear 15mm of visible pastry all the way around.
  6. Sprinkle the Manchego on top of the bean mixture.
  7. Place the other piece of pastry on top of the bottom piece, then lightly press down all around the edge to seal. Next, using a fork, press firmly all around the edges of the pastry.
  8. Using a sharp knife gently pierce the top piece of pastry, making a small slit to allow steam to escape.
  9. Brush the top all over with beaten egg. Place on a lined baking tray and cook at 200ºC (fan) for 25min.
