Brie and Pickle Pastry Wreath

Preparation time: 15min
Cooking time: 15min
Serves: 6

  1. Pre heat the oven to 200ºC, Fan Oven 180ºC, Gas Mark 6 and line a baking sheet with parchment paper.
  2. Roll the pastry and cut a large circle out of the pastry.
  3. Lay the large pastry circle on the prepared baking sheet.
  4. Mark an inner circle with a medium sized bowl, don’t press all the way through the pastry.
  5. Cut four cuts into the centre circle, this will create 8 triangles.
  6. Spread the Perfect Party Pickle around the outer circle then top with the brie and pistachios.
  7. From the four cuts, bring one triangle of the centre outwards over the filling as well as bringing the outer edge of pastry inwards. Press the two together and continue all the way around with the remaining 7 triangles until you have a wreath.
  8. Brush with beaten egg then place in the oven and allow to bake for 15min until golden brown and cooked through.
  9. Remove from the oven, allow to rest for 5min then slice and serve.
