Cheesy, crispy and delicious, yet surprisingly easy to make, serve this as a side dish for your Christmas guests, or pop it in your festive buffet!

Cooking time: 1hr 30min
Serves: 6

  1. Preheat the oven to 200°C, Fan Oven 180°C, Gas Mark 6.
  2. Slice the potatoes at regular intervals without cutting all the way through.
  3. Put the potatoes in a large baking tray and coat with the garlic and oil. Season to taste.
  4. Place in the preheated oven for 1hr to 1hr 20min. Toss occasionally to ensure an even golden colour.
  5. Meanwhile, prepare the super quick pickled onion.
  6. Add the vinegar, caster sugar and salt to a bowl and mix well.
  7. Add the red onion and mix.
  8. Set aside until ready to serve.
  9. To serve, top the potatoes with Primula Original Cheese, pickled onion, and garnish with dill.
