Coronation Party Elderflower Biscuits

These simple biscuits are transformed into a truly elegant morsel with the addition of Belvoir Special Edition Elderflower Cordial. Perfect for a coronation tea party!

Preparation Time: 10min
Cooking Time: 8-10min
Makes: lots!

  1. Preheat the oven to 180°C (160°C fan).
  2. Put the margarine and sugar in a mixing bowl. Beat until light and fluffy.
  3. Add the egg and cordial. Beat again.
  4. Add flour and baking powder. Mix gently until combined.
  5. Put rounded teaspoons of mixture at least 5cm apart on a lined baking tray. An alternative method is to put the mixture in a piping bag and pipe 2cm wide blobs.
  6. Bake for 8-10min until the biscuits spread and turn lightly golden.
  7. Allow to cool and firm up slightly on the tray before transferring to a wire rack to cool.
