Cherry Cacao Fro-Yo

Here’s a delicious, yet healthier chilled treat that you don’t need an ice cream maker to whip up! The sweetness of the cherries alongside the smooth acidity of the yoghurt creates a perfectly balanced alternative to ice-cream.

Preparation Time: 50min-1hr
Freezing Time: 3-4hrs
Serves: 10

How to make Cherry Cacao Fro-Yo:

    1. Put your loaf tin or cake tin into the freezer.
    2. In a medium bowl mix your yoghurt, milk, sugar or stevia, vanilla, stirring well. Chill in the freezer while you complete the next steps.
    3. Empty your cherries and brown sugar into a pan. Simmer on a medium heat for 10-15min. Stir in the juice of half a lemon and leave to cool.
    4. Remove the tin and yoghurt mix from the freezer, and pour the yoghurt into the tin.
    5. Stir every 20-30min and when it’s starting to thicken considerably, swirl through your cherry mix.
    6. Leave to freeze for at least 3-4hrs before serving.
    7. Sprinkle your fro-yo with cacao nibs for a crunchy topping!
