Easy Crab & Prawn Laksa

Here’s a stunningly quick and easy way to make a stunningly tasty dish! You might find laksa in Southern Thailand, Malaysia or Singapore. Five of the ingredients for this version come in cans, and everything –  including the raw prawns – is boiled up together into a delicious broth, served with rice noodles.

Cooking time: 15min

Serves: 4

  1. In a saucepan, warm the sesame oil and gently fry the garlic, spring onion and chilli.
  2. Once these are soft, add in the king prawns, crab meat, coconut milk, stock, tomatoes and the vegetables and bring to the boil. Leave to simmer for 5min.
  3. Follow the packet instructions and boil the noodles for the time specified, Drain once cooked.
  4. Spoon out the broth. To each bowl add a squeeze of lime and a sprinkle of fresh coriander.
