Campfire Beans

With a combination of three beans, four delicious spices (plus a good glug of Dr Trouble Sauce), four of your five-a-day and a surprise shot of coffee, this is a vegan supper bowl to warm and invigorate! Quick to prepare, it takes an hour or so to simmer down into a rich, flavour-filled stew.

Cooking time: 1hr 40min
Serves 6

  1. Heat the olive oil in a heavy-based pan and gently fry the onions, celery and carrots for 10 minutes, until softened.
  2. Add all of the ingredients to the pan, give it a good stir and if it needs it, add enough water to just cover the beans. Cover with a lid and simmer for 1½ hours, or until the beans are tender, topping up with more water if needed, or removing the lid for the last 30min of cooking if there is too much liquid.
  3. Serve alone, or with vegan sausages or baked potatoes.
