Kale & Chickpea Dhansak

A vegan recipe that’s so delicious, and only £1 per person to make!

Preparation time: 10min
Cooking time: 30min
Serves: 4

  1. Heat the oil in a large saucepan and fry the onion for 3min, add the potatoes and aubergine and fry for a further 2-3min.
  2. Stir in the curry powder then stir in the chickpeas and lentils.
  3. Add the stock, bring to the boil and cook, covered for 15min, stirring occasionally.
  4. Add the kale and cook for a further 5min.
  5. Season to taste and serve with a little yoghurt alternative.
