Kale & Chickpea Dhansak
A vegan recipe that’s so delicious, and only £1 per person to make!

Cooking time: 30min
Serves: 4
- Heat the oil in a large saucepan and fry the onion for 3min, add the potatoes and aubergine and fry for a further 2-3min.
- Stir in the curry powder then stir in the chickpeas and lentils.
- Add the stock, bring to the boil and cook, covered for 15min, stirring occasionally.
- Add the kale and cook for a further 5min.
- Season to taste and serve with a little yoghurt alternative.
