Goats’ Cheese Muffins

Rich, savoury muffins perfect for breakfast… or any other time!

Preparation Time: 20min
Cooking Time: 23min
Makes: 12 muffins

  1. Preheat the oven to 190˚C/Fan 170˚C/Gas 5.
  2. Prepare the red peppers by deseeding, dicing them into small cubes and grilling them under a high grill until they char slightly.
  3. Lightly grease 12 holes of a muffin pan and line with muffin cases.
  4. Heat butter, yogurt and milk in a pan over medium heat.
  5. Sift dry ingredients into a large bowl. Add the thyme, egg and roasted peppers.
  6. Drop in grated cheese, season with salt and pepper, then stir gently until just combined.
  7. Divide the mixture between the muffin cases.
  8. Bake for 20min until risen and golden.
